Gail’s Kale Salad

Try this simple recipe for kale salad, an early spring vegetable available locally!

Dressing:

Whisk together

1/4 cup olive oil

2 tbsp real maple syrup

2 tbsp balsamic vinegar

1-3 cloves of garlic, minced

 

Salad:

1 bunch of kale, washed, ribs removed, and chopped

1 apple, cored and chopped

1 orange, sectioned and chopped

1/4 cup chopped celery

1/4 cup pecans, toasted

1/4 cup dried cherries

1/4 cup raisins or currants

1/8 cup green onion, chopped

 

Could add any cooked meat to create a main dish.
