Cucumber-Lime Paletas (popsicles)
Cucumbers are in season now and there are lots of them at the market. Here is an idea of a way to use them beyond sliced or pickles. There is more summer weather predicted, lets enjoy it.
Ingredients
SERVINGS: MAKES 8
- 1 large cucumber (10–12 oz.), peeled
- 1 cup simple syrup (1 c. sugar and 1 c. water, heat & stir until sugar is dissolved, allow to cool. makes 1 1/3 c.)
- ⅓ cup fresh lime juice
- 1 teaspoon finely grated peeled ginger
Preparation

Purée cucumber with simple syrup, lime juice, and ginger until smooth. Strain through a fine-mesh sieve (or cheese cloth) into a large measuring cup, divide among ice-pop molds, insert sticks, and freeze until solid, at least 6 hours.
